400 Conejos Espadin Anejo Mezcal is produced in Oaxaca, Mexico, using 100% Agave Espadin. Traditional mezcal methods include slow roasting pinas in underground earthen pits, natural fermentation and careful double distillation. For this Anejo expression, the distilled mezcal is aged in oak barrels for an extended period, often 1 to 3 years. The nose has roasted agave, toasted oak and amber honey, with vanilla pod, dried apricot, subtle citrus peel, smoke, sweet peat and minerality. The palate is medium-to-full-bodied, with smoky agave, sweet caramelized sugar, spice, cedar wood, light tannic structure, almond meal, dried fruit compote and a hint of cocoa. The finish is long, smooth and warming.
