400 Conejos Reposado is an artisanal mezcal made from 100% Espadín agave grown around Tlacolula in Oaxaca. The agave is roasted in a wood-fired, cone-shaped stone oven, milled by a stone pulled by horse, fermented in wooden vats and distilled in copper pots.
The reposado character comes from time in American oak barrels, which gives a pale honey-gold colour and softens the smoke without hiding the agave.
On the nose, roasted agave and soft wood smoke lead, with vanilla, caramel and a light citrus lift. The palate is smooth and rounded, moving from cooked agave sweetness to vanilla, toasted oak and gentle baking spice, with the smoke sitting underneath. The finish is warm and medium long.
