400 Conejos Espadín Joven Mezcal Artesanal (75cl, 40%)

400 Conejos Espadín Joven is an unaged mezcal artesanal from Oaxaca, Mexico, made entirely from Espadín maguey grown in Tlacolula and bottled at 40% abv in a 75cl bottle. The agave is roasted in a wood-fired, cone-shaped oven, milled by horse-driven stone, fermented in wooden vats and distilled in copper. The oven gives a moderate, well-integrated smoke. It is clear and bright. The nose leads with cooked agave and citrus over gentle wood smoke and light herbal notes. The palate is clean and bright, with sweet roasted agave, herbal character and light pepper, and the finish is smooth and warming, closing on agave and soft smoke.
