Abasolo Whisky

Abasolo is a Mexican whisky from Jilotepec, made entirely from Cacahuazintle maize and distilled at Destilería y Bodega Abasolo, a distillery built specifically to grow that variety of corn for whisky. The maize spirit is matured in toasted oak casks kept in an open space, where the temperature changes a great deal. The nose and palate open with deep, nuanced roasted corn alongside sweet aromas of honey and vanilla. The finish is subtle, with hints of leather and black tea.
