Aberfeldy 12 Years is a Highland single malt from the Perthshire distillery founded in 1896 by the Dewar family, John Dewar & Sons. Fermentation runs for 72 hours in Siberian larch washbacks, and the spirit is distilled slowly in tall copper pot stills.
The whisky matures for at least 12 years in ex-bourbon American oak casks, with part of the spirit aged in sherry casks and blended in.
The nose offers heather honey, ripe melon and baked apple, with vanilla fudge, toffee, cinnamon and cardamom. The palate is full and silky, with honey, citrus and peach, followed by cream, vanilla and toasted malt. The finish is medium to long, with ginger, cinnamon, a trace of smoky oak and sweet citrus peel.
