Amarás Logia Azul Joven Mezcal Artesanal (70cl, 43%)

Amarás Logia Azul is an unaged joven mezcal artesanal from Tlacolula, Oaxaca, made from Agave tequilana, the blue Weber agave, grown for eight years. It is bottled at 43% in a 70cl bottle as a numbered edition of 5,066 bottles. The piñas are roasted in a conical oven fired with encino oak over volcanic stone, then crushed by hand with a wooden mallet. Fermentation takes place in open wooden vats, followed by double distillation in small copper alembics. The nose offers roasted agave, delicate smoke, citrus and a mineral edge. On the palate, toasted agave sweetness meets green pepper and citrus, with the smoke sitting underneath. The finish is long, closing on white flowers, minerals and agave.
