Aultmore 2007 is an 11-year-old single malt bottled by Signatory Vintage in its Exceptional Cask series. It matured entirely in first-fill Oloroso sherry butts, which show in its deep colour; the colour is natural and the whisky is non-chill filtered.
It is bottled at 57.1%, the strength known as 100 Proof, in a 70cl bottle. Tasting notes list dark raisins, caramel, roasted nuts and spicy sherry on the nose, then chocolate, dried fruit, plums and soft oak on the palate. The finish is long and intense, with warm spices, cocoa and sweet sherry.
