An 8 year old Aultmore from 2017, part of the Duncan Taylor Octave range. After its main maturation it spent three months in an Amontillado octave finish. It is bottled at 54% ABV in a 70cl bottle.
The tasting notes compare the whisky before and after the octave finish. Before, they list peat, fire embers, lemon zest, pretzels and smoked bacon. Afterwards the notes turn to ripe white grapes, toffee sweetness, apricots, vanilla and pastries.
