Ayala Brut Majeur is a non-vintage Brut Champagne from the house of Ayala, founded in 1860 in Aÿ. It is a blend of 45% Chardonnay, 35% Pinot Noir and 20% Meunier, made by the traditional method and bottled at 12%. Each cru, grape variety and vintage is vinified separately in small stainless-steel tanks before the final blend is assembled.
The nose is lemon oil, pear and white peach, with a little mint, orange zest and thyme. The palate is medium-bodied and taut, with lemon meringue, peach and salted citrus, then grilled nut and gentle pastry over a chalky texture. The finish is long and dry, with mineral freshness and a trace of smoke.
