Baldoria Dry Rosso Vermouth (75cl, 18%)

Baldoria Dry Rosso Vermouth is a Piedmontese vermouth made by Ernest Spirits in Boves, in the province of Cuneo. It sits between a dry white vermouth and a traditional rosso. The base combines Chardonnay and Nebbiolo from Piedmont, giving the tannin and spice of a rosso alongside the bright acidity of a dry white. Botanicals, including wormwood and elderberries, are grown on a pesticide-free and herbicide-free plot beside the production site, with wild botanicals foraged in the Alpine foothills. Nothing is added in the way of flavours, colourants or preservatives. The nose offers orange peel, lemon zest, thyme and rosemary. The palate is dry and crisp with bitter orange, grapefruit and a hint of dried fig, and the finish is moderately long with gentian, quinine and white pepper.
