Ballina – Dubailte (70cl, 43%)

An Irish single malt whiskey from Ballina Distillery, double distilled and matured in bourbon and Oloroso sherry casks. It comes in a 70cl bottle at 43% ABV. The distillery was formerly called Connacht and opened in 2015. It was the first in County Mayo for 150 years and stands on the west coast of Ireland. Production and maturation both happen on site, using Irish malted barley and a long fermentation. The nose is of honey, green apple, pear and honeydew melon. The palate is soft, with toffee and vanilla from the bourbon casks, then dried fruit, raisins, warm spice and nuts from the Oloroso. The finish is warm, with a hint of walnuts and honey.
