Ballina – Triarach (70cl, 43%)

Ballina Triarach is an Irish single malt, triple distilled and bottled at 43% in a 70cl bottle. It was matured in a mix of casks: 50% bourbon, 40% Oloroso sherry and 10% Ruby port. Ballina Distillery, formerly Connacht Distillery, opened in 2015 on the west coast of Ireland. It was the first distillery in County Mayo for 150 years, and it distils and matures on site using Irish malted barley and a long fermentation. The nose offers stewed plums, poached pears and a hint of Christmas spices. The palate is creamy and rich, with plums, caramel, figs, dates and nuts. The finish is medium to long, with banana bread and spice.
