This Kentucky straight bourbon comes from the Collaborative Series of Bardstown Bourbon Company, made in partnership with Chicago's Goose Island Beer Company and released in September 2023. It is bottled at 50% (100 proof).
The bourbon is a blend of 6, 7 and 9-year-old Kentucky straight bourbons, finished for a further 12 months in freshly emptied Goose Island Bourbon County Stout barrels.
The nose has dark chocolate, honey, toasted almond, vanilla cream, caramel and cocoa. The palate opens with brown sugar and toffee, then dark chocolate, roasted malt, cacao, coffee and allspice. The finish is long and warming, with roasted malt, oak spice and coffee, ending dry and malty.
