Barr Hill Vodka (75cl, 40%)

Barr Hill Vodka is made by Caledonia Spirits in Hardwick, Vermont, from raw wildflower honey rather than grain. It comes in a 75cl bottle at 40% ABV. The distillery never heats the honey before fermentation, which keeps the wild yeast present in it, and distils no more than twice to hold on to the honey's aromatics. On the nose there are wildflowers and vanilla with a creamy sweetness. The palate is creamy, with vanilla and wildflowers developing towards the middle, and the finish is soft, with lingering floral honey.
