This is a non-vintage rosé Champagne from Billecart-Salmon, blended from Chardonnay, Pinot Noir and Pinot Meunier at 12.5% ABV in a 75cl bottle.
The base wines are 40% Chardonnay, 30% Pinot Noir and 30% Pinot Meunier, with a small proportion of still red Pinot Noir. That red wine comes from massal-selected vines of 60 to 80 years old in Mareuil-sur-Aÿ and is cold macerated before fermentation.
The nose is wild strawberry, peach skin, flowers and a hint of cinnamon. The mousse is fine and creamy, with sour cherry, redcurrant and citrus zest. The finish is long, with chalky minerality and raspberry.
