Billecart-Salmon Cuvée Elisabeth Salmon Rosé Champagne (75cl, 12.5%)

Cuvée Elisabeth Salmon is a prestige rosé Champagne from Billecart-Salmon of Mareuil-sur-Aÿ, bottled at 12.5% in a 75cl bottle. It is named after the house's co-founder and made by the traditional method. The blend is 55% Chardonnay from Grand Cru villages including Chouilly, Avize, Le Mesnil-sur-Oger and Cramant, and 45% Pinot Noir from Aÿ, Ambonnay and Mareuil-sur-Aÿ. Less than 10% of the Pinot Noir is vinified as still red wine from vines over 80 years old in the Valofroy parcel, next to Clos des Goisses. The nose shows dried blood orange, wild raspberry and sweet spice. The palate is crisp, with mandarin, morello cherry and strawberry over a chalky edge. The finish is long, with citron zest and red and white currant.
