Bimber – PX Sherry Cask #456 Germany Edition 2023 (59.2%)

Bimber Pedro Ximénez Sherry Cask #456 is a London-distilled whisky from the Bimber distillery, released as part of the Germany Edition 2023 and limited to 280 bottles. It is bottled at 59.2%. The whisky matured in a cask previously filled with sweet Pedro Ximénez sherry. Bimber works with regional single-farm barley and barley malted on a traditional floor, ferments for seven days in washbacks made in its own cooperage, and distils in two direct-fired pot stills. The light, fruity character of the London spirit meets intense dark notes and baking spices.
