This is a single cask Bimber named The Spirit of the Underground, a tribute to Tower Hill station, in a 70cl bottle. It is one of 348 bottles and was additionally matured in a Palo Cortado sherry cask.
Tower Hill station opened in its present form in 1967, close to the largest remaining stretch of London Wall.
On the nose, dried apricot and orange join sherry spices, white chocolate and caramel. The palate brings bright apple and citrus with toffee, ginger, cinnamon and nutmeg, while gently charred oak sits alongside espresso beans. The finish is coffee and walnut cake with tangy cask spices.
