Bimber Single Malt London Whisky is a single cask bottling from the London distillery, finished in a former imperial stout cask. It belongs to the Collection New Vibrations, made for La Maison du Whisky.
The whisky was distilled in 2017 and bottled in 2023 at cask strength, 56.8%, in a 70cl bottle. Cask 259/2/290 gave 257 bottles. It is non-chill-filtered and has no added colouring.
The nose has sweet pineapple, ripe apple and vanilla with dark chocolate, ginger and walnut. The palate is lively and fresh, with yeast and grain notes, herbs, bitter chocolate and curry spice. The finish is long and warm, with apple pie, tropical fruit and fresh herbs.
