Bimber Small Batch Bourbon Cask Batch 02/2020 (70cl, 52.2%)

This is a small batch single malt from Bimber, a craft distillery in London. Batch 02/2020 was put together from American oak bourbon casks and bottled at cask strength, 52.2%, on 26 October 2020. The run came to 2,950 bottles, and the whisky is natural in colour and not chill-filtered. Bimber ferments for seven days, more than twice as long as is usual, in washbacks built in its own cooperage. The notes run to green apple and stone fruit, sweet cereal, creamy vanilla, caramel and a fine spiciness.
