Bimber – Southport Whisky Festival 2020 Single Cask #127 (70cl, 59.3%)

This is a single cask ex-bourbon single malt from Bimber, bottled in 2020 for the Southport Whisky Festival at 59.3% ABV in a 70cl bottle. It is bottle 108 of 275. Dariusz Plazewski set up the London distillery in 2015 with Ewelina Chruszczyk, after emigrating from Poland. The name is the Polish word for moonshine, a nod to his family's roots in making it. The distillery uses wooden washbacks of its own design, left a little dirty so that the bacteria and yeast left behind enhance the next spirit.
