Bimber – Spirit of the Underground Waterloo #099

This is a single cask English single malt from Bimber, a distillery in Park Royal, west London. It is the Waterloo release in the Spirit of the Underground series, made in collaboration with Transport for London. The series began in May 2021, and each bottling marks a different station on the London Underground. This one comes from a single cask and is cask strength, with 257 bottles filled. Bimber laid down its first casks on 26 May 2016 and released its first single malt in September 2019. It sources all of its barley from one producer and uses floor maltings and slow fermentation.
