Bimber – The 1st Release (70cl)

This is the first release from Bimber, the London distillery founded by Dariusz and Ewelina, who moved from Poland to the UK in 2003. It is a single malt in a 70cl bottle, and 1000 bottles were drawn from a selection of ex-Pedro Ximenez sherry casks. Bimber laid down its first casks on 26 May 2016 and released its first single malt in September 2019. The distillery buys all of its barley from a single producer and uses traditional floor maltings and slow fermentation. Its stills, a 1,000-litre wash still and a 600-litre spirit still, were made by Hoga of Spain.
