Bimber – The 1st Release (70cl)

This is the first single malt release from Bimber, the London distillery founded by Dariusz and Ewelina, who moved from Poland to the UK in 2003. It was drawn from a selected batch of ex-Pedro Ximenez sherry casks, and this is bottle 544 of 1000. The distillery laid down its first casks on 26 May 2016 and released this whisky in September 2019. It was the first whisky both distilled and bottled in London for over a century. Bimber buys all of its barley from a single producer and uses floor maltings and slow fermentation.
