Bodega Sanchez Romate Amontillado Sherry (75cl, 17%)

This is a dry amontillado sherry from Jerez, made from Palomino Fino and bottled at 17% in a 75cl bottle. It starts as a fino aged under flor, then continues to age oxidatively once the flor dies, which brings its amber colour and nutty depth. Sanchez Romate has been based in Jerez de la Frontera since 1781. Its wines age in the criaderas y soleras system, and here the fino solera feeds the amontillado solera. The colour is bright amber, with a pungent, lasting almond aroma. The palate is smooth and nutty, with apple, dried fruit and orange rind.
