Sanchez Romate Fino Sherry (75cl, 15%)

This is a dry fino sherry from Jerez, Spain, made entirely from Palomino Fino grapes and bottled at 15% ABV in a 75cl bottle. Sanchez Romate is a family bodega founded in Jerez de la Frontera in 1781. The wine is fortified and then spends four years under a layer of flor yeast in American oak casks, moving through the criaderas y soleras system. The flor shapes its dry, lively character. In the glass it is pale straw, with a floral nose and notes of blanched almond and salty olive brine. The palate is bone dry with fresh acidity, and the long finish carries minerality and a lingering saltiness.
