Bodega Sanchez Romate Pedro Ximénez Sherry (75cl, 15%)

This is a sweet Pedro Ximénez sherry from Jerez, Spain, made entirely from Pedro Ximénez grapes and bottled at 15% ABV in a 75cl bottle. Sanchez Romate was founded in Jerez de la Frontera in 1781 and remains a family-owned bodega. The wine is fortified and aged for five years in the criaderas y soleras system, the fractional method of Jerez. It is dark mahogany in the glass. The nose is soft, with raisins, ripe plum, fig and a hint of honey. The palate is creamy, velvety and intensely sweet, with a persistent finish. It suits desserts, blue cheese and chocolate, served at 10 to 12 degrees Celsius.
