This is a single cask Bowmore, distilled in 1997 and aged 25 years. Andrew Symington of Signatory selected it for the first release in the Symington's Choice series, part of the Signatory Vintage Cask Strength Collection. It was bottled from an Oloroso sherry butt at 55.9% ABV, one of 616 bottles.
The nose shows paraffin, mineral notes and grapefruit, then oyster, damp gravel and a hint of wet tweed, with apple peel and grilled pineapple. The palate offers exotic fruit juice with sea water, mango, pink grapefruit, passion fruit, lemon liqueur and a slightly sharp, grassy smoke. The finish is long, a little drier and more herbal, with faint smoke, beeswax and sea water.
