Bozal Ensamble Mezcal (75cl, 47%)

Bozal Ensamble is an artisanal mezcal from Oaxaca, bottled at 47% in a 75cl bottle. It blends three agaves: cultivated Espadin with wild-harvested Barril and Mexicano. The agave hearts are roasted in earthen pit ovens and distilled in copper pots. The mezcal is made by a rotation of mezcaleros, under the guidance of master distillers Marcelino Ortiz and Onofre Ortiz. The nose combines vanilla frosting and green apple with eucalyptus, allspice, pear and a faint savoury note. The palate opens with grapefruit and agave nectar, turns ashy and mineral, then adds lime zest, stone fruit and smoked cayenne. The finish is warm and viscous, with minerality, green pepper and lingering smoke.
