This is a Canadian bourbon-style spirit from Bridgeland Distillery in Calgary, Alberta, in a 50cl bottle. Mash #2 is made with Taber corn, including 60% in the mash bill, alongside wheat and barley from Penhold, all grown by two Alberta farming families.
It is mashed, fermented and distilled in small batches in a pot still. Jacques Tremblay and Daniel Plenzik chose new charred American oak barrels for maturation, as barrel ageing contributes roughly two-thirds of the flavour and aroma.
