A 1994 millésime Calvados from Drouin, made from apples grown in the Pays d'Auge area. After distillation it rests in oak barrels, partly Banyuls, adding sweet, spicy and lightly toasted notes to the fruit.
The nose shows cooked apple, walnut, vanilla and a subtle hint of cocoa and red fruit. The palate is enveloping and soft, with a long, complex finish where acidity meets a persistent balsamic sweetness.
