Cascade Moon 'Mellow as Moonlight' is a 15 year old Tennessee spirit from Cascade Hollow Distilling in Tullahoma, released as Edition No. 3 in a 750ml bottle. It was bottled at barrel strength, 39.9%, just under the 40% minimum for whisky, so the label calls it spirit distilled from grain. Nicole Austin, the distillery's general manager and distiller, chose to bottle it this way. It matured for fifteen years in single-story warehouses and follows the Lincoln County Process, with the spirit chilled before charcoal filtering. The nose is soft caramel, seasoned oak and old-barrel spice rather than heat. The palate offers supple wood and dried orchard fruit, and the finish is quiet and warming.
