Dingle – Single Malt Irish Whiskey (70cl, 46.3%)

Dingle Single Malt was the distillery's first permanent whiskey release, added to its range in 2021. It is triple distilled, made entirely at Dingle, and bottled at 46.3% in a 70cl bottle. Maturation uses first-fill casks only: 61% Pedro Ximénez sherry casks and 39% bourbon casks. The sherry casks add sweetness and body. It is non-chill-filtered and of natural colour. The nose combines lime zest, freshly cut mint and sweet pears. The palate brings caramelised apple, raisins and vanilla, and the finish leaves honey sweetness and a mix of spices.
