Dingle Single Pot Still Irish Whiskey (70cl, 46.5%)

This is Dingle Single Pot Still, an Irish whiskey in a 70cl bottle, bottled at 46.5% without chill-filtration or added colour. Dingle makes it from locally sourced malted and unmalted barley, mashed in a wooden mash tun and distilled three times. This small-batch bottling is a vatting of 59% bourbon casks, 33% oloroso sherry casks and 4% each of PX sherry and red wine casks. The nose combines mild baking spice with nutmeg, cinnamon and allspice. On the palate, cooked dark fruit and brown sugar meet spiced stewed apple, with a velvety texture. The finish opens with classic pot still spice, followed by toasted oak and gentle honey, and nutmeg lingers.
