A Dolcetto d'Alba DOC red wine from Giacomo Grimaldi, made in Novello in the Langhe from Dolcetto grapes grown in a one-hectare west-facing vineyard. The soil alternates clay and sand, and the wine is vinified with three days of temperature-controlled maceration in steel tanks, followed by malolactic fermentation and nine months of ageing in steel. It is produced from pure Dolcetto at 13.5% ABV, with an indicated production of about 13,000 75cl bottles.
Versatile and pleasant, it suits everyday table drinking and traditional Piedmontese cooking, pairing with ragù pasta, agnolotti, cured meats, white meats and medium-aged cheeses. Served slightly cool, it highlights drinkability and the direct character typical of the grape. It is intended to express the territory of Novello and the essential style of Giacomo Grimaldi.
