Early Times Bottled in Bond is a Kentucky straight bourbon from the Early Times Distillery in Shively, Kentucky. The brand dates back to 1860, and this Bottled-in-Bond expression was revived in 2017. Under that designation it is aged at least four years in new charred oak barrels and bottled at 100 proof, 50% ABV, here in a 1 litre bottle. The mash bill is mostly corn, with rye and malted barley.
The nose has peach, raspberry, dried apricot, vanilla custard, toasted oak and a hint of cinnamon. The palate offers caramel corn, light brown sugar, shortbread, chocolate and baking spice, and the finish is medium to long with caramel sweetness and gentle spice.
