El Jimador Blanco is an unaged blanco tequila from Jalisco, Mexico, made from 100% blue Weber agave harvested in Amatitán. The agave hearts are slow-cooked in traditional clay ovens and then double-distilled. The tequila is unfiltered.
The nose is crisp, with fresh-cut agave, lime zest, pepper and a little citrus sweetness. On the palate earthy agave comes first, then green apple, black pepper and a touch of vanilla, in a light but clean style. The finish is quick and lightly spiced, leaving some lasting warmth.
