This is a 12-year-old Kentucky straight bourbon from Elijah Craig, named after a Baptist preacher. It is bottled at barrel proof, 60.1% ABV, without chill-filtering. The batch is C921.
The mash bill is 78% corn, 12% barley and 10% rye. The bourbon matures for 12 years in new charred oak barrels, and a maximum of 100 selected barrels go into each small batch.
The nose offers caramel and toasted oak with apple and orange. On the palate come vanilla, caramel and butterscotch, with black pepper and cinnamon spice. The finish is layered and long.
