This is Batch A121 of Elijah Craig Barrel Proof, a Kentucky straight bourbon from Heaven Hill Distillery in Bardstown. It was released in January 2021 and is aged for a minimum of 12 years in charred new oak.
The bourbon is bottled straight from the barrel at 123.6 proof (61.8% ABV), with no water added and without chill filtration.
The nose leads with caramel and brown sugar, then dark cherry, toasted oak, vanilla bean, cinnamon and dark chocolate. The palate is full and textured, with dark fruit, toffee, burnt caramel and baking spice, and a pronounced but well-integrated oak. Black pepper heat builds steadily. The finish is long, with charred oak, dried fruit, cocoa and a warm spice fade.
