Elijah Craig Barrel Proof is a Kentucky straight bourbon from Heaven Hill's Bernheim Distillery, bottled in a 750ml bottle at barrel strength. It is non-chill-filtered, and the strength varies by batch from 59.1 to 64.5% ABV.
The bourbon is made from 78% corn, 12% malted barley and 10% rye, and aged in new charred American oak barrels. Three batches are released each year, each with its own alphanumeric code.
The nose offers charred oak, brown sugar, cinnamon and salted caramel. The palate is bold, with caramel, dark fruit, black pepper and baking spices. The finish is slow, with butterscotch, pepper and charred oak.
