Don Nuño is a dry Oloroso sherry from Emilio Lustau of Jerez de la Frontera, bottled at 20% ABV. It is made entirely from Palomino, with no Pedro Ximénez or other sweetening added.
The wine is aged oxidatively for an average of 12 years in American oak butts through the solera system, in which younger wines are blended with older stocks.
The nose has walnut and toasted almond over a smoky, woody backdrop, with toffee and dried stone fruits emerging. The palate brings bitter chocolate, roasted walnut, black tea and orange peel, with a briny salinity and lively acidity. The finish is long, with dried apricot, pecan and a lean, saline close. It is best served slightly chilled.
