San Emilio is a dessert sherry from Emilio Lustau in Jerez de la Frontera, made from 100% sun-dried Pedro Ximénez grapes and bottled at 19.5% in a 75cl bottle.
The grapes are laid out in the Andalusian sun until they shrivel, concentrating the sugars. Fermentation is halted early to keep them, and the wine then ages oxidatively for 12 years.
The nose is rich with dried fig, date, dark raisin and roasted nuts, with a faint iodine note. The palate is luscious and viscous, with brown sugar, molasses, cinnamon cake and prune, held in check by firm acidity. The finish is very long, with dried fruit, toasted nuts and a bittersweet cocoa edge.
