Estancia Raicilla Pechuga (48%)

Estancia Raicilla Pechuga is an unaged agave spirit from Jalisco, Mexico, made in the pechuga style and bottled at 48% ABV. It is produced at Estancia Distillery under maestro raicillero Alfredo Salvatierra from 100% Agave maximiliana. The agave is cooked in an adobe oven, fermented in clay amphora pots and distilled three times in copper pot stills. The third distillation includes toasted pumpkin seed, quince, apple, plum, lemon leaves, almonds, chamomile, hibiscus, nancite, lima peel, rose castilla, orange blossom and raw turkey breast. Roasted agave leads on the nose, with smoke, nuts, orchard fruit and floral, herbal lifts. The palate is peppery and savoury with plum, apple and quince, and the finish is long, with roast, smoke and citrus.
