Filey Bay Sherry Cask Reserve #2 (46%)

This is the second edition of the Sherry Cask Reserve from Filey Bay, and the fourth Special Release from the Spirit of Yorkshire distillery. It matured entirely in first-fill Pedro Ximenez casks and has been resting in the distillery's warehouses since 2017. The Special Releases show a deeper, darker side of the distillery than its usual bourbon-matured house style. Pedro Ximenez is one of the sweetest, richest sherries, known for honey, jam, raisins and candied fruit. The whisky is bottled at 46%, non-chill-filtered and with no added colouring. The character is rich and fruity, with baked apples, cinder toffee, chocolate orange and fruit cake.
