Filey Bay STR Red Wine Cask (47.3%)

Filey Bay STR Red Wine Cask is a whisky from Spirit of Yorkshire, a farm distillery near Hunmanby on the East Riding coast. It has joined the permanent range to mark the distillery's tenth anniversary, and is bottled at 47.3%. It is built solera-style, with the casks continually topped up with older whisky from the warehouse. The wood is ex-red wine barriques that have been shaved, toasted and re-charred, the STR method. The nose offers warm biscuit and marzipan with macerated redcurrant and bramble over a faint coastal salinity. The palate is soft and rounded, with boiled sweets and toasted almond, then cherry, damson skin and a touch of clove.
