Four Pillars Olive Leaf Gin (75cl, 43.8%)

Four Pillars Olive Leaf Gin is a savoury gin from the Yarra Valley in Victoria, built around the olive rather than citrus or flowers. It took five years to develop and is distilled in small batches. Three cold pressed extra virgin olive oils and an olive leaf tea, all from Cobram Estate, go into the still with juniper. Rosemary and bay leaf from the distiller's own garden, macadamia nuts, lemon myrtle and lemon complete the botanicals, giving a rounded, textural mouthfeel. The nose offers olive leaf, fresh herbs and lemon myrtle over juniper. On the palate it is savoury, with rosemary, bay leaf, a subtle nuttiness and bright citrus, ending long, clean and herbaceous. It was made with the Martini in mind.
