This is a 12 year old Glenallachie from the Wood Collection, a range by Billy Walker built around careful cask management. It was finished in Sauternes casks, selected hogsheads that had held the French dessert wine from Bordeaux, and is bottled at 48% ABV in a 70cl bottle.
The cask is said to bring ripe peach, caramel sauce, ginger and ice cream.
The nose offers honeycomb, butterscotch and caramel sauce, with candied ginger, mocha and peaches. On the palate come tropical fruit, heather honey and baking spices, then demerara sugar, coconut and marmalade. The finish brings citrus, caramel and ice cream.
