A Speyside single malt from GlenAllachie, distilled in 1989 and matured for 35 years in six casks: three Pedro Ximénez hogsheads, an Oloroso puncheon and two virgin oak casks. Master distiller Billy Walker describes a balance of Pedro Ximénez sweetness, nutty Oloroso and virgin oak spice.
It is bottled at 48%, in natural colour and not chill-filtered. It comes in a wooden box, in a squat decanter, with a booklet of Walker's handwritten notes on the cask selection.
The nose brings mocha, cinnamon, heather honey and pineapple. The palate layers dark chocolate, raisins and dried fruit with nutmeg and cloves, and the finish is long and warming.
