Independence is an Irish whiskey from Grace O'Malley, whose label carries the Irish Pirate Queen. It combines malt and grain whiskey and is bottled at 40% ABV in a 70cl bottle.
The whiskey was matured in bourbon barrels and virgin American oak.
The nose is Williams pear, apricot and crème brûlée. On the palate there is toasted brioche, freshly baked puff pastry and yellow fruits. The finish is smooth and creamy, soft and delicate, with hints of toasted cereal.
