Green River Full Proof is a wheated Kentucky straight bourbon bottled at barrel strength, 54.7% ABV, without dilution. It was made at Green River Distilling Co. in Owensboro, a distillery with roots dating back to 1885, from a mashbill of 70% corn, 21% wheat and 9% malted barley. The bourbon is aged for 5 to 7 years in new charred American oak and matured in clay tile rickhouses.
The nose opens with caramel and vanilla, followed by baked apple, cinnamon and toasted oak. The palate shows ripe stone fruit, honey butter, toasted wheat bread and baking spices. The finish is long and warming, with oak spice, cinnamon, baked bread and caramel.
